Quercetin – an interesting plant compound
Quercetin is a secondary plant compound with antioxidant effects and belongs to the large group of flavonoids. Foods such as onions, capers, elderberries, apples and blueberries are particularly rich in quercetin – all well-known sources of natural antioxidants.
Alongside kaempferol, quercetin is one of the most common flavonoids found in plant-based foods – and at the same time one of the most intensively studied.
In nature, quercetin is found not only in its pure form, but also in bound forms, for example as rutin. This is a flavonol made up of quercetin and the sugar rutinose.

What properties does quercetin have?
Quercetin is especially valued for its contribution to cellular protection against oxidative stress. Antioxidants help the body defend itself against free radicals – a process associated with protection against so-called lifestyle diseases (Xu et al., 2019; Kıran et al., 2023). Among flavonoids, quercetin is considered one of the most important protective compounds from plant-based nutrition.
In addition, quercetin is also being studied in connection with allergies. Studies suggest that it may influence the release of histamine from mast cells – a possible factor in allergic reactions such as hay fever or in cases of histamine intolerance (Yamada et al., 2022; Weng et al., 2012).
Further clinical data suggest that quercetin may also have potential supportive effects in certain cases of rheumatoid arthritis or viral challenges (Javadi et al., 2017; Pierro et al., 2023).
