This structural cross-linking provides resilience, tensile strength and resistance in various proteins in the body. A standout example is the structural protein keratin, which occurs in large amounts in the hair, nails, claws, hooves and horns of mammals. The more strongly their components are cross-linked by disulfide bridges via L-Cysteine, the stiffer the fibers are. In horns and hooves it is particularly stable, while in wool and hair it has a more flexible structure.

Reaction with metals

The sulfur group in cysteine can also react with metals, which is why it often serves as a binding partner for minerals such as zinc in proteins. This property also makes cysteine a central component of the body’s own antioxidant glutathione. Glutathione can bind heavy metals and therefore contribute to the body’s detoxification.

N-Acetylcysteine (NAC) is a specially modified form of cysteine that is particularly stable and well tolerated.
